  6. It's 2 of baby courgettes, sliced into ribbons with a vegetable peeler.
  7. You need 3 of baby (sweetbite) snacking bell peppers, sliced into rings.
  8. Prepare 1 of lemon cut into wedges to serve.
  9. It's 2 tbsp of sesame seeds.
  10. Prepare of Dressing.
  11. It's 200 grams of coconut yogurt (see recipe below) / natural yogurt.

  13. Prepare 3 tbsp of freshly chopped coriander / cilantro.
  14. You need 1 of lemon, zested and juiced.

  1. In a large bowl combine the chickpeas, mango, cucumber, tomatoes, onion, courgette/zucchini and peppers.
