  1. Prepare of Salad.
  2. Prepare 375 grams of dry wild rice.
  3. You need 2 can of (400g each) mixed beans, drained & rinsed - I used a mix of cannellini, flageolet and adzuki beans but any are fine.
  4. It's 1 can of (340g) sweetcorn, drained.
  5. Prepare 1 of red onion, peeled & finely sliced.
  6. Prepare 2 of red bell peppers, deseeded & finely sliced.
  7. You need of Dressing.
  8. You need 1 of grated zest and juice of 1 lime.
  9. Prepare 2 tsp of agave nectar / honey.
  10. You need 1 of red chilli, deseeded & finely chopped.

Vickys Mixed Bean & Wild Rice Salad instructions

  1. Cook the rice according to the packet instructions, then drain and rinse cold - I used Lundberg Wild Blend brand rice - it contains a mixture of long grain brown rice, sweet brown rice, wild rice, whole grain red rice and black rice.
  2. Put in a bowl with the mixed beans, sweetcorn, onion and bell peppers.
  3. Mix the dressing ingredients together.
  4. Toss with the other ingredients and add salt or other seasonings to taste.
  5. This is a great side for picnics, potlucks, pizza, chicken, fish, goes with pretty much anything. You don't need to dress with the dressing I listed, you can use mayo or any other salad dressing you love.
  6. This amount will serve 10 - 12 people.
